Is there an article/post or any type of document that clearly states what type of schema should be used on what pages?
• For example I recently saw a post that stated e-commerce websites (that do not have a physical location) using should be using Online Business (and not Organisation schema). I am sure every ecom business has a corporate office and I wasn't aware one cannot use that.
• Similarly about using Website schema, where I read that this schema is specifically for Home/About Page only.

There are common themes, but there will never be total standardization of what Schema should go where.

A good thing to understand is that an OnlineStore is a specific type of Organization. It's just a more specific way to define the business. You can fill in all the same Organization information, but you are also saying this business sells things online.

@Shawn Huber hey thanks but I do have this! From what I have seen is it generalises the schemes on domain level and not at page level.. on my product landing pages it had recommended local schema which was funny..

Yeah, it will show overall, based on the data it has from people using the plugin and other sources, what are the most popular schemes, not necessarily a recommendation for the page type you are implementing. I use it as a guide more than absolute truth. Like you said, if it is a product page, local isn't going to be a good option.
